1. What is khichdi?
Khichdi is a simple easy to digest porridge like blend of lentils and rice. It is referred to as the Indian “comfort food”.
2. How is khichdi a “complete protein”?
A complete protein consists of all the 20 amino acids that the body needs. The body can synthesize 10 of these amino acids on its own. The other 10 called as the essential amino acids cannot be made by the body, which means that we need to get them from the food we consume. Animal proteins consist of all these 10 amino acids making them a complete protein. However, for plant foods we need to combine them to make a “complete protein”.
Rice is low in amino acid lysine, but legumes and lentils are very high in lysine. However, legumes are low in amino acid in methionine, tryptophan, and cystine, but rice is high in all these three amino acids. Hence marriage of rice and lentils or legumes as in khichdi, provides all the 10 essential amino acids, making khichdi a complete protein.
3. What are the benefits of sprouting?
Sprouting makes the food more alkaline. Sprouting also makes the protein more digestible and increases the Vitamin C, and B vitamins like thiamine, niacin and riboflavin content.

Ayurveda is one of the world’s oldest holistic healing systems and was originated in India more than 3000 years ago. It believes in the philosophy that health depends upon a delicate balance of harmony between mind, body, and spirit.
5. What are dosha?
Our body is a composition of 5 elements namely earth, water, fire, wind, ether. The science of Ayurveda is about balancing these five elements in our body. Our body type is determined based on these elements. Clubbed together as pairs, they determine a dosha or body type. *
6. What is tridoshic?
“Tridosha defines the three fundamental energies or principles which govern the function of our bodies on the physical and emotional level. The three energies are known a vata, pitta, and kapha. Each individual has a unique balance of all three of these energies. Some people will be predominant in one while others are a mixture of two or more”. *
7. What is Vata ?
The vata dosha is said to be made up of the air and ether elements. This means that it has qualities which are similar to these elements. Vata is very much like the wind--it is light, cool, dry and mobile. In the body, those people with a vata nature experience more of these qualities. *
8. What is Pitta?
The pitta dosha is said to be made up of the fire and water elements. Fire is more predominant, and those people with a predominant pitta nature have many of the qualities of fire within them. Pitta tends to hot, sharp, and penetrating. It is also somewhat volatile and oily. The oily nature of Pitta is related to the secondary component of water. People with a Pitta nature reflect these qualities. *
9. What is Kapha dosha?
Within the kapha dosha there is a predominance of the water and earth elements. Like these elements, kapha tends to be cool, moist, stable and heavy. In the body, these qualities manifest as dense, heavy bones, lustrous, supple skin, low metabolism, and large, stocky frames. *
10. Can I only consume khichdi based on my body type?
The dosha or body type is highlighted for each variety of khichdi, since there are certain spices which are more beneficial for that body type. However, it is absolutely alright for anyone to eat all the varieties.
11. How are our chutneys different than the other chutneys available in the market?
Our chutneys are easy to use and are prepared using nutrient dense ingredients which make them rich in nutrients such as vitamin A, C, anti-oxidants. 14. How can I use the chutney?
Using Aahana's Naturals chutney is very simple. You can just reconstitute it with water (as per the given directions) and use it as a dip, mix it with cream cheese and use it as a sandwich spread, or also mix it with sour cream or salad oil and use it as a salad dressing.
15. How do I store my chutney?
As long as it is in the dry form, you can store it at room temperature. The only thing you have to do is store it in a cool dry place. If it is stored in the original bag, please make sure it is zip locked perfectly. If you empty it in a jar, please select an airtight jar.
Once the chutney is reconstituted with water you can keep refrigerated for up to 1 week.
16. Are the chutneys spicy?
Aahana's Naturals chutneys are mild, but very flavorful. You can choose to increase the spiciness by adding cayenne pepper to the chutney.
17. Why are Aahana's Naturals chutneys in dry form?
Our chutneys are freeze dried so as to preserve their nutritional value. Any other process to prepare shelf stable chutneys would require some preservatives or would increase sodium and or fat levels. We use this process to make our chutneys easy to use and handy in the kitchen without having to worry about refrigerating them.
